Houmous Lamb with Roasted Red Peppers and Lentil Salad


This dish is just so good that just thinking about it makes me hungry! Seriously, it’s healthy, quick to cook and soooo tasty. Check it out.

Serves: 2

Cooking time: 35-40 minutes

Ingredients: 6 lamb chops (bone-in)

150g red pepper and garlic houmous

50g dried green lentils

40g rocket

100g roasted red peppers (about two peppers) from a jar, drained and sliced

garlic power, salt and pepper to season

1tsp English mustard

juice of 1/2 lemon

1tsp olive oil

pita bread, to serve

1. Boil the lentils for 15 minutes and set aside. While the lentil are boiling, make the salad dressing. Squeeze juice of 1/2 lemon. Mix the juice, olive oil, mustard and set aside. When the lentils are ready make the salad: mix the rocket, roasted pepper and lentil in a bowl and add the dressing. Season with salt and pepper.

2. Heat 1 tsp of olive oil on the griddle over high heat. In the meantime, season the lamb chops with garlic power, salt and pepper. Grill the lamb for 3-4 minutes on each side. Then spoon 1 tsp of houmous on each lamb chop and cook for another 1-2 minutes.

3. Serve lamb chops with lentil salad and pita bread. Use the remaining houmous as pita bread topping.
