Beef Stroganoff


Serves: 2

Cooking time: 40 min.


1 tbsp olive oil

200g Beef sirloin steak, cut into thin strips

140g white rice, boiled

120g white mushrooms

1 onion, thinly sliced

1 1/4 tsp hot paprika

1tbsp lemon juice

150ml sour cream

handful of parsley leaved, finely chopped

salt & pepper


1. Heat the oil in a frying pan over high heat. Season the meat with salt and pepper. Fry the beef strips for 2-4 minutes until lightly browned on each side, then transfer to a plate.

2. Add the onions and paprika to the pan and  fry for 2 minutes until softened. Then add the mushrooms and cook for 5-7 minutes until softened. Pour in the sour cream, bring to boil and simmer for 1-2 minutes until thickened.

3. Return the beef to the pan and cook gently for another 1-2 minutes.

4. Stir in the parsley and lemon juice. Serve over white rice.
