Scrambled Eggs with Cherry Tomatoes, Chorizo and Spring Onions

Serves: 1


1 tsp olive oil

3 tbsp spring onions, chopped

8 cherry tomatoes, halved

50g chorizo sausage, sliced

2 eggs

1 garlic clove, finely chopped

salt and pepper, to season

pecorino cheese, to top with

1. Heat olive oil in pan. Add the chorizo sausage and fry for 2-3 minutes. Add chopped garlic and cook for another 30 seconds. And eggs and cook for 1 minute, then add the cherry tomatoes and spring onions and cook for another minute. Season with salt and pepper and top with pecorino cheese. Voila! Nice breakfast, lunch or brunch. Serve with toasted garlic bread.
