Melted Goat Cheese, Egg and Rocket Baguette


So I recently replaced the soggy British toast bread with half baked baguettes from Sainsbury and they’re amazing! You only need to bake them for about 8-12 minutes, no additives, preservatives…just crispy bread. This is a simple lunch idea but I love it (it’s very filling as well).

Serves: 1


1 baguette

20g Chevre cheese (French goat cheese), sliced

2 eggs

couple leaves of rocket

2 tsp wholegrain mustard

6-8 cherry tomatoes (optional), on the side

1. If using half baked baguette – preheat the oven to 180 C and bake the baguette for around 7 minutes then place the sliced cheese on the baguette and return to the oven for another 2-3 minutes until lightly melted.

2. In the meantime fry the eggs. Take care not to overcook (the egg yolk should be runny).

3. Take the baguette out of the oven, spread the mustard, sprinkle with rocket and top with eggs. I love cherry tomatoes and could everything with tomatoes so I had this with some tomatoes on the side but it’s up to you! Enjoy!
