Moist Banana Bread


Equipment needed: masher, 18-19cm bread/loaf tin


3 ripe bananas

1/2 tsp cinnamon

1/2 tsp nutmeg

1 tsp baking powder

1 tsp bicarbonate soda

150g caster sugar

75g unsalted butter

2 eggs

120ml milk

250g self-raising flour

50g walnuts (optional)

1. Heat the oven to 180C.

2. Melt the butter over low heat and allow to cool down. In the meantime, mash the bananas in a small bowl. In a separate bowl, sift the flour, bicarbonate soba, baking powder, cinnamon and nutmeg and stir well.

3. In another bowl, beat the eggs, melted butter and milk  (with a fork or whisker). Add the mashed bananas and stir through. Add the egg & banana mixture to the dry ingredients and stir with a fork until it forms a lumpy paste (do not overmix).

4. Grease the bread tin with butter and pour the cake mixture into the tin.

5. Transfer to the oven and 35-50 minutes (or until golden brown and well risen). Remove from the oven and allow the banana bread to cool down for a few minutes.
