Pomegranate Mint Lemonade


So refreshing! Pomegranate, juice of lemon, mint, sugar & ice! I wish there were more sunny days in the UK which would actually call for such a drink 😉

Serves: 2 (easily doubled)

Equipment: blender, lemon squeezer


60g pomegranate seeds

3 tbsp white sugar

small bunch of fresh mint (approx. 10 leaves)

10 ice tubes

250ml still water

4 lemons

1. Combine 100ml of water, sugar and 30g of pomegranate in a small pot and heat over medium heat to make a syrup. Once sugar dissolves, bring to boil and transfer a fridge for 15 minutes.

2. In the meantime squeeze juice from four lemons.

3. Pour the syrup, remaining water, pomegranate seeds, squeezed lemon juice and chopped mint in the blender and top with ice. Blend until the mixture liquifies and transfer to glasses. Enjoy!
